Lentil Chili

Simple & Delicious!


1 28 oz. Can Crushed Tomatoes

1 5 oz. Can Green Chilis

1 10 oz. Can Diced Tomatoes & Green Chili

1/4 Cup Frozen Corn

4 Cups Water

3/4 Cup Lentils

1 15.5 oz. Can Black Beans

1 15.5 oz. Can Red Chili Beans

1 Medium White Onion

2 Bell Peppers (1 Green/1 Red)

2 Tbsp. Chili Powder

2 Tbsp. Onion Powder

2 Tbsp. Cumin

1/4 tsp. Cayenne Pepper

Salt & Pepper to taste


1. Start by chopping your onion and peppers. Add the onions and peppers to a large stew pot with 1 Tbsp. water and begin to cook. After the onions become translucent and the peppers soften, add in all of your canned ingredients.

2. Stir in seasonings and add 3 cups of water. Bring to a boil.

3. Add lentils and let simmer for about 30 minutes, or until lentils are cooked. Check about every 10 minutes to make sure they don't stick to the bottom of your pot.

4. Serve with your favorite toppings - some of mine are Jalepenos, Corn Bread, Tortilla Chips, vegan cheese, and vegan sour cream!


This recipe gets better as the days go on and freezes well!
