Mini Vegan Apple Pies

3 Honey Crisp Apples

1 Package Puff Pastry (use one dough)

2 Tbsp. Brown Sugar

2 Tbsp. Lemon Juice

1/2 tsp. Cinnamon

1/8 tsp. Nutmeg

1 Mini Cupcake Pan


1.Preheat oven to 375 degrees, take out Puff pastry to let defrost (takes about 35 minutes).

2.Finely chop apples and place in a bowl, add Brown Sugar, Lemon juice, Cinnamon, and Nutmeg. Stir ingredients and let sit while puff pastry defrosts.

3. Use a cookie cutter to cut small circles, oil your Cupcake Pan and place dough circles into the cupcake molds. Press ends down as you go, make sure it is firmly in the pan.

4. Spoon apples into the dough molds (a 2 scoops from a spoon in each shell), be careful not to overload the shell.

5. Bake at 375 for 15 minutes or until shell is golden brown and apples are tender

6. Let cool and enjoy
